Zucchini Bread

Makes 1 loaf

Preheat oven to 350 degrees F. Oil a 9 x 5 inch loaf pan.

Grate 2 medium zucchini. Press grated squash tightly into measuring cup to squeeze out as much water as possible.

Beat well:

3 eggs (or ¾ c “egg product”)
1 ¼ c olive oil
1 ½ c sugar
1 t vanilla

Fold in

2 c grated zucchini

Sift and add to zucchini mix:

2 c unbleached flour
2 t baking soda
1 t baking powder
1 t cinnamon
1 t ground cloves

Fold in:

1 c chopped pecans or walnuts
1 c raisins

Bake 1 hour and 15 minutes or until a knife or small skewer inserted into the middle of the loaf comes out clean.
