Scones

This recipe is from Alexandra via Moosilauke Ravine Lodge; we really enjoyed all the scones Alex made for us in the fall and early winter of ’00 after being on fall crew at MRL. Alex says the recipe comes from the King Arthur Flour Cookbook which she highly recommends as a great baking cookbook.  The Lodge served heart shaped scones one morning of Alex and Dan's Wedding Weekend

2 c white flour
1 c wheat flour
1 T baking soda
½ to 1 t salt
2 to 8 T butter at room temperature
0 to 8 T sugar
1 to 1 ¼ c buttermilk

1) Preheat oven to 500 degrees F.
2) Mix dry ingredients, cut in butter, add buttermilk.
3) Knead gently 8-10 times.
4) Form scones on buttered baking sheet.
5) Turn oven down to 450 and bake 15-20 minutes.

Options for liquid if no buttermilk is available:

Eliminate baking soda and substitute sweet milk for buttermilk

OR Add 1 T vinegar to 1 C sweet milk, let sit 5 minutes, substitute for buttermilk
