Oatmeal Cookies

As a family, these are one of our favorite cookies. Because they are “a favorite” I used to make them for school trips and was surprised on occasion when quite a bit of the batch came home. I always attributed that to not enough sugar and butter, but lately it occurred to me, perhaps Alex/Topher saved a stash for themselves. These day the coveted oatmeal cookie would be Chris's Awesome Oatmeal Cookies.






Preheat oven to 375 degrees F

Beat together until creamy (I use food processor fitted with steel blade):

¾ c canola oil (or 3/4 olive oil or 1/2 c olive oil + 1/4 orange juice or milk0
1 c firmly packed brown sugar
½ c granulated sugar
1 egg (or 1/4 c "egg product")
¼ c water
1 t vanilla

Then add:

3 c oats, uncooked (traditional, not quick-cook)
1 c flour
½ t soda

Pulse mixer just to blend oats with other ingredients; don't pulverize the oats! Mix in any/all of the following - I usually use all three and mix by hand not with food processor:

½ c raisins
½ c chocolate chips (I use Ghiradelli 60% Cacao Bittersweet)
½ c nuts (I usually use pecans)

Drop by rounded teaspoon onto greased or non-stick cookie sheet. Bake 12-15 minutes.

Cool on wire rack.
