Half Baked Potatoes

1/2 to 1 potato per person

This is a “Moogie” recipe. Easy to make and faster than baking a whole potato.

Preheat oven to 400 degrees F.

Scrub well then cut in half the long way

1 Idaho potato

Dry the potato, then rub all sides with

Olive oil

Place potato(es) flat side up on cookie sheet. On top of each potato place:

Small pat of butter (or just a bit more olive oil)
Pepper and salt to taste
Paprika

Bake until top is golden brown and fork easily pierces potato, 30-45 minutes depending on size of potato.


VARIATION:

Use:

1 sweet potato or yam instead of the Idaho potato

Rosemary instead of paprika.
